Pesto and Entremont Saint Mont des Alpes cheese madeleines
Ingredients for 10 madeleines
- 2 eggs
- 100g flour
- 1/2 sachet baking powder
- 2 tablespoons oil
- 60g grated Entremont Saint Mont des Alpes + 10g to decorate
- 2 tablespoons pesto
- 2 tablespoons milk
Preheat oven to 220°C
Mix the flour, baking powder, and eggs in a bowl. Pour in the oil and whisk briskly. Add the grated Entremont Saint Mont des Alpes cheese, milk, and pesto. Mix again. Salt and pepper to taste.
Put in the refrigerator for 1 hour.
Fill each hole with a spoonful of batter and smooth over. Sprinkle with grated Entremont Saint Mont des Alpes cheese.
Bake the madeleines for 4 minutes at 220°C and then lower the temperature to 180°C without opening the oven door and cook for another 10-15 minutes until golden brown. Leave to cool, then turn out. Serve.
