Comté and Boiled eggs blinis

Ingredients to make 20 blinis

  • 150g grated Entremont Comté cheese
  • 200g flour
  • 20cl milk
  • 40g melted butter
  • 20g butter for cooking
  • 4 eggs for the blinis batter
  • 4 eggs to boil
  • 1 packet baking powder
  • A pinch of chopped chives
  • Salt and pepper

Preparation

Separate the egg yolks. In a bowl, add the flour, egg yolks, a pinch of salt, and the baking powder. Melt the butter in the milk and gradually incorporate it in the bowl. As soon as the mixture is smooth, add the grated Entremont Comté cheese, chives, and a pinch of pepper. Beat the egg whites until stiff then fold them gently into the batter.

Lightly butter a hot frying pan. Cook the blinis 3 by 3 by pouring small ladlefuls of the batter into the pan.

Boil the eggs and serve them with piping hot blinis.
